Sesame Shrimp & Asparagus

INGREDIENTS
1½ lbs. fresh Fifer asparagus
2 small onions, sliced
1½ lbs. shrimp shelled and deveined (small to medium size)
1 tablespoon sesame seeds
1/3 cup vegetable oil
4 tablespoons soy sauce
1¼ teaspoons salt
DIRECTIONS
- Diagonally cut asparagus into 2-inch pieces. Also, prepare onions and shrimp.
- In a dry wok (or 10-12 inch skillet), toast sesame seeds over medium heat until golden, stirring and shaking pan occasionally. Remove and set aside.
- Heat oil in the same pan to medium-high heat. Cook asparagus, onions, and shrimp until shrimp are pink and vegetables are tender-crisp. About 5-8 minutes. Stir in sesame seeds, soy sauce, and salt until just mixed.
- Serve over white or brown rice.
