Delaware Peach Cobbler
2005 4-H Recipe

4 C. sliced peeled fresh or thawed frozen peaches
1½ C. of sugar, divided
½ t. almond extract
½ C. butter or margarine, melted
¾ C. all-purpose flour
2 t. baking soda
Pinch of salt
¾ C. of milk

In a large bowl, toss peaches, 1 cup of sugar and extract; set aside. Pour butter into a 2 quart baking dish. In another bowl, combine flour, baking powder, salt, and remaining sugar; stir in milk. Mix well. Pour evenly over butter (do not stir). Top with peach mixture. Bake at 350° for 50-55 minutes or until golden brown. Serve with ice cream, if desired.
Yield: 8 servings.
