Recipes - Peach Coffee Cake

Ingredients:
2 cups flour, 2 teaspoons baking powder, pinch of salt, ¼ pounds
butter (softened) 1 ½ cups sugar, 2 eggs, ¾ cups milk,
cinnamon, 1/3 cup oil 1 small box of vanilla instant pudding, 2-3
ripe peaches peeled and cut.
Directions:
Sift flour, baking powder, and salt. Mix in butter with fingers and
add sugar. Take out 1 cup, and set it aside. Add eggs, one at a time,
beat hard. Then add milk, beat. Add oil, beat, add pudding mix, and
beat again. Pour mixture into greased 9 x 13" pan. Cover the
top with cut peaches and press them into the batter. Add cinnamon
(approximately ½ - 1 teaspoon) to crumbs and spread over top
of cake. Bake at 350 degrees for 50 minutes to an hour.
