Recipes - Peachy Cinnamon Pinwheel Pie

Ingredients:
Crust: 1 stick of butter, 2 cups of flour, ¼ teaspoon of salt, 1 egg, 2 tablespoons of ice water " More butter, sugar, & cinnamon for pinwheels
Filling: 8 peaches, ½ cup of sugar, 1 t. cinnamon, 1 T. cornstarch, ¼ cup water
Directions:
With pastry blender, mix the room temperature butter with flour until small lumps remain. Gently add the egg and water. Form into ball. Roll out half of the dough for the bottom crust. Slice 8 peaches and sprinkle with sugar and cinnamon. Stir in mixture of cornstarch blended in a ¼ cup of water. Cook for 5 minutes. Fill crust.

Take the rest of the dough and roll out approximately 8" x 8". Spread with 2 tablespoons of room temperature butter. Sprinkle ¼ cup sugar and 1 teaspoon of cinnamon on crust. Roll up in a jelly roll style and slice into ¼" pinwheels. Use the pinwheels as the top crust. Bake at 350 degrees for 45-50 minutes or until golden brown.
