Recipe- Lima Beans and Corn

Ingredients:

  • 1/3 cup of low sodium chicken broth
  • 1 cup of baby lima beans
  • 1 cup of corn
  • 1/4 teaspoon of sugar
  • 1/8 teaspoon of black pepper
  • 2 tablespoons of fat free sour cream

Preparation:

  • Bring broth to a boil, add beans and corn
  • Reduce heat, cover and simmer for 8-10 minutes or until vegetables are just tender.
  • Add sugar and pepper
  • Simmer until liquid is almost evaporated.
  • Add sour cream and serve.
