Recipe - Blueberry Stuffed Cornish Game Hen

Ingredients:

  • 8 Cornish Game hens, thawed
  • slat and pepper
  • 1/4 cup oil
  • 1/4 cup lemon juice
  • 1/4 cup Angostura bitters
  • 4 cups fresh blueberries
  • 4 teaspoons sugar
  • 1/2 cup butter or margarine
  • 8 small bay leaves

Directions:

  • Sprinkle game hens inside and out with salt and pepper. Mix oil, lemon juice and Angosture bitters.
  • Brush game hens with mixture inside and out.
  • Fill each bird with 1/2 cup blueberries and 1/2 teaspoon sugar.
  • Swe or skewer opening and place in shallow roasting pan.
  • Spread soft butter over breasts of birds and place bay leaf on butter.
  • Roast in a preheated oven (350 F) for one hour or until leg is easliy moved.
