Recipes - Delaware Fried Apples
DELAWARE FRIED APPLES
(from Delaware Agricultural brochure)
6 med. Cooking Apples
2/3 C. sugar
1/3 C. butter
1 Tbsp. cinnamon
Core but do not peel apples. Slice ½" thick to make perfect rings. Heat butter in heavy, large skillet. Fit in the apple rings to cover bottom of skillet without breaking slices. Mix sugar & cinnamon with a dash of salt; cover apples with half of the mixture. Cook slowly for 5 minutes. Carefully, turn over slices, avoid breaking. Cover with remaining sugar mixture & cook over low heat until apples are almost transparent. If too well done, they will break easily. Serve warm, maybe topping with vanilla ice cream!
