Recipes - Apples 'N Sweet Potatoes
APPLES ‘N SWEET POTATOES
(from Fifer’s 75th Anniversary Cookbook) - Side 1
5 Sweet Potatoes
¼ C. butter
4 large Apples, peeled, cored & sliced
1 tsp. nutmeg
½ to 1 C. brown sugar
¼ C. hot Apple Juice or Cider
2 tsp. salt
½ C. honey
Boil sweet potatoes until almost tender. Peel and slice when cooled. Alternate layers of sliced potatoes & apples in medium casserole dish, beginning with potatoes & ending with apples.

Cover each double layer with some of the sugar, salt, & bits of butter. On top layer of apples, sprinkle remaining brown sugar & dots of butter. Sprinkle with nutmeg. Mix hot apple juice & honey & pour evenly over top. Bake at 400 degrees for about 30 to 45 minutes, until apples are tender. Serves 8.
