Recipes - Cranberry-Waldorf Salad
CRANBERRY-WALDORF SALAD
(from Fifer’s 75th Anniversary Cookbook) - Side 1
3¾ C. cranberry juice cocktail
1 C. diced celery
2 3 oz. pkgs. Lemon flavored gelatin
½ C. coarsely chopped walnuts
½ tsp. salt
½ C. seedless raisins
2 C. diced, un-peeled Red Apples
Heat 2 C. cranberry juice to boiling. Pour over gelatin & stir until dissolved. Stir in remaining 1¾ C. juice & salt. Chill until thickened. Fold in remaining ingredients. Chill until firm. If desired, top with Fruit Dressing before serving.
Fruit Dressing: 1 C. mayonnaise, ½ C. orange juice, & 1 tsp. grated orange peel; combine & chill before serving.
