Recipes - Pumpkin-Apple Streusel Muffins

PUMPKIN-APPLE STREUSEL MUFFINS
(from Fifer’s 75th Anniversary Cookbook) - Side 1

2 C. flour
2 eggs, lightly beaten
2 C. sugar
1 C. prepared or canned Pumpkin
1 Tbsp. pumpkin pie spice
½ C. vegetable oil
1 tsp. baking soda
2 C. Apples, peeled & finely chopped
½ tsp. salt

In large bowl, combine flour, sugar, pumpkin pie spice, baking soda, & salt; set aside. In medium bowl, combine eggs, pumpkin, & oil.

Add liquid ingredients to dry ingredients; stir until moistened. Stir in apples. Spoon batter into greased or paper-lined muffin cups, filling ¾ full. Sprinkle Streusel Topping (see below) over batter. Bake in preheated oven 350 degrees for 35 to 40 minutes or until toothpick comes out clean. Yields 18 muffins.

Streusel Topping: In small bowl, combine 2 Tbsp. flour, ¼ C. sugar, & ½ tsp. cinnamon. Cut in 4 tsp. butter or margarine until mixture is crumbly.
