Recipes - Apple-Nut Coffee Cake

APPLE-NUT COFFEE CAKE
(from Fifer’s 75th Anniversary Cookbook) - Side 1

Batter:
½ C. butter or margarine, softened
1 C. sugar
2 eggs
1 tsp. vanilla
2 C. flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1 C. sour cream
2 C. Apples, peeled & finely chopped

Topping:
½ C. walnuts, chopped
½ C. brown sugar
1 tsp. cinnamon
2 Tbsp. melted butter

In large bowl, cream together butter & sugar. Add eggs & vanilla; beat well. Sift together flour, baking powder, soda, & salt. Add to creamed mixture alternately with sour cream. Fold in apples. Spread batter in greased 13x9x2 inch baking pan. Combine topping ingredients; sprinkle over batter. Bake for 40 minutes at 350 degrees.
