Scallions & Radishes

Probably originating in Asia, the onion is one of the oldest harvested herbs in civilization.

Scallions are the tender, young seedlings of onions. They tend to be milder tasting than other onions. Scallions can be eaten raw, or used as a hint of onion in recipes.

Radishes were first cultivated thousands of years ago in China, then in Egypt and Greece. It is the root of a plant classified in the mustard family. The most popular variety of radish is the red-globe, which is the familiar red and white kind.

Store radishes in the fridge and use within a few days.

Radishes are 95% water, a good source of dietary fiber, high in vitamin C, and, like all vegetables, low in calories.
